Few smells say "holidays" like fresh gingerbread coming out of the oven. With a little planning, you can turn this classic into a dosed, adults-only treat to enjoy on a quiet snowy evening. Here's our go-to recipe — and the dosing math to keep it safe and predictable.
Important: Dosing Math First
Before you bake, you need to know the total milligrams of THC in your cannabutter, and how many cookies you'll end up with. The math:
- Total mg in cannabutter ÷ number of cookies = mg per cookie
For a beginner-friendly batch of 24 cookies at 5 mg each, you want 120 mg total THC in the butter you use in the recipe. Always label your finished cookies and keep them away from anyone under 19, pets, and anyone who didn't sign up for an edible.
Ingredients (Makes ~24 Cookies)
- 1/2 cup (113 g) cannabutter, softened (see our cannabutter post for instructions) - 1/2 cup packed brown sugar - 1/2 cup fancy molasses - 1 large egg - 1 tsp vanilla extract - 2 1/2 cups all-purpose flour - 1 tsp baking soda - 1/2 tsp salt - 2 tsp ground ginger - 1 1/2 tsp ground cinnamon - 1/2 tsp ground cloves - 1/4 tsp ground nutmeg
Instructions
1. Cream the butter and sugar. In a large bowl, beat the softened cannabutter and brown sugar until fluffy, about 2 minutes. 2. Add wet ingredients. Beat in the molasses, egg, and vanilla until smooth. 3. Mix the dry ingredients. In a separate bowl, whisk the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. 4. Combine. Gradually add the dry ingredients to the wet, mixing just until a stiff dough forms. Don't overmix. 5. Chill. Wrap the dough in plastic and refrigerate for at least 1 hour (or up to overnight). This makes it much easier to roll. 6. Roll and cut. Preheat the oven to 350°F (175°C). On a lightly floured surface, roll the dough to about 1/4 inch thick. Cut into shapes and place on a parchment-lined baking sheet about 1 inch apart. 7. Bake. Bake for 8 to 10 minutes, until the edges are just set. They'll firm up as they cool. 8. Cool completely on a wire rack before decorating or eating.
Decorating (Optional)
A simple royal icing — 1 egg white whisked with about 1 1/2 cups icing sugar and a squeeze of lemon — is perfect for piping. Keep the decoration *visually distinct* from regular cookies so no one mixes them up.
Dosing Reminders
- Start with one cookie if you're experienced, or half a cookie if you're new. - Edibles take 30 to 90 minutes to kick in and can last several hours. Be patient. Do not "stack" doses because nothing's happening yet. - Never drive after eating an infused cookie. - Store in a sealed, labeled container, ideally in a locked cupboard.
